Silky no-bake cheesecakes with a crunchy biscuit base and macerated mixed berries; serve chilled.

# What You'll Need:

→ Biscuit Base

01 - 5.3 oz graham crackers or digestive biscuits, finely crushed
02 - 4 tbsp unsalted butter, melted

→ Cheesecake Filling

03 - 10.5 oz cream cheese, softened
04 - 1/2 cup heavy cream, cold
05 - 2.5 oz powdered sugar
06 - 1 tsp vanilla extract
07 - Zest of 1 lemon (optional)

→ Berry Topping

08 - 7 oz mixed fresh berries (such as strawberries, blueberries, raspberries)
09 - 2 tbsp granulated sugar
10 - 1 tbsp lemon juice

# Directions:

01 - Combine crushed graham crackers or digestive biscuits with melted butter in a mixing bowl until the mixture is evenly moistened. Divide the mixture among 6 serving glasses or ramekins and press down to form a firm even base.
02 - In a large bowl, beat softened cream cheese until smooth. Incorporate powdered sugar, vanilla extract, and lemon zest if using. In a separate bowl, whip cold heavy cream to stiff peaks, then gently fold into the cream cheese mixture until homogenous. Spoon or pipe the filling over the biscuit base in each glass.
03 - In a small bowl, mix fresh berries with sugar and lemon juice. Allow the mixture to macerate for 10 to 15 minutes until the berries begin to release their juices.
04 - Spoon the berry mixture over the cheesecake layer in each glass. Refrigerate for at least 3 hours or overnight until fully set. Serve chilled.
