# What You'll Need:

→ Pad Thai Sauce

01 - 3 tablespoons tamarind paste
02 - 3 tablespoons fish sauce
03 - 1 1/2 tablespoons soy sauce
04 - 2 tablespoons palm sugar or light brown sugar
05 - 1 tablespoon lime juice
06 - 1 teaspoon chili flakes (optional)

→ Chicken & Noodles

07 - 8 ounces flat rice noodles
08 - 2 tablespoons vegetable oil
09 - 2 chicken breasts (about 10 1/2 ounces), thinly sliced
10 - 3 garlic cloves, minced
11 - 2 eggs, lightly beaten
12 - 1 cup bean sprouts
13 - 4 green onions, sliced
14 - 1 medium carrot, julienned
15 - 1 red bell pepper, thinly sliced

16 - 1/2 cup roasted peanuts, roughly chopped
17 - Fresh cilantro leaves
18 - Lime wedges

# Directions:

01 - Place the rice noodles in a large bowl of warm water and soak for 20 to 30 minutes, or until softened. Drain thoroughly and set aside.
02 - Whisk tamarind paste, fish sauce, soy sauce, palm sugar, lime juice, and chili flakes in a small bowl until sugar is fully dissolved. Reserve for later use.
03 - Heat 1 tablespoon vegetable oil in a large wok or skillet over medium-high heat. Add sliced chicken and stir-fry until just cooked through. Remove chicken from the pan and set aside.
04 - Add remaining 1 tablespoon oil to the pan. Add minced garlic and cook for 30 seconds until fragrant.
05 - Push garlic to one side of the pan. Pour in beaten eggs and scramble gently until just set.
06 - Add drained noodles, reserved sauce, and cooked chicken to the pan. Toss thoroughly to combine and heat through, about 2 to 3 minutes.
07 - Incorporate bean sprouts, green onions, julienned carrot, and red bell pepper. Stir-fry for 1 to 2 minutes until vegetables are crisp-tender.
08 - Remove from heat. Serve immediately, topped with chopped peanuts, cilantro, lime wedges, and additional chili flakes as desired.
