Collagen Fruit Jellies Treat (Printable Version)

Colorful homemade jellies blending fresh fruit juice with collagen peptides for a wholesome, refreshing treat.

# What You'll Need:

→ Fruit Juice Base

01 - 1 cup pure fruit juice (orange, berry, or apple)
02 - 2 tablespoons fresh lemon juice

→ Collagen and Gelling

03 - 2 tablespoons collagen peptides powder
04 - 2 tablespoons honey or maple syrup, adjusted to taste
05 - 2½ tablespoons (25 g) unflavored powdered gelatin

→ Optional Enhancements

06 - 1 teaspoon vanilla extract
07 - Sliced fresh berries or citrus zest for garnish

# Directions:

01 - Pour the fruit juice and lemon juice into a small saucepan. Sprinkle the gelatin evenly over the liquid surface and allow it to bloom for 3 to 5 minutes undisturbed.
02 - Place the saucepan over low heat and stir gently until the gelatin has completely dissolved. Do not allow the mixture to boil.
03 - Remove the saucepan from heat. Whisk in the collagen peptides powder, honey or maple syrup, and vanilla extract until the mixture is smooth and fully combined.
04 - Taste the mixture and add additional honey or maple syrup if a sweeter finish is desired.
05 - Transfer the liquid into silicone jelly molds or a parchment-lined, lightly oiled 8-inch square baking dish.
06 - Arrange sliced fresh berries or a touch of citrus zest into each mold or across the surface of the baking dish.
07 - Refrigerate for at least 2 hours or until the jellies are firm and fully set.
08 - Carefully remove the jellies from the silicone molds. If using a baking dish, cut into even squares. Serve chilled.

# Expert Advice:

01 -
  • They taste like the gummy snacks you loved as a kid but secretly pack protein and collagen into every bite.
  • You only need about fifteen minutes of actual work before the fridge does everything else.
02 -
  • If the gelatin does not bloom properly your jellies will never set so make sure you sprinkle it evenly rather than dumping it in a clump.
  • Boiling the mixture destroys the gelling power of both gelatin and collagen so low and gentle heat is the only way.
03 -
  • Lightly oil your molds or line your pan with parchment before pouring because nothing is sadder than a beautiful jelly that sticks and tears when you try to remove it.
  • Let the gelatin bloom the full five minutes because rushing this step is the number one reason jellies turn out grainy or weepy.
