→ Oils & Seasoning

03 - 2 tbsp olive oil
04 - 1/2 tsp sea salt

02 - Drain beans and immediately plunge into a bowl of ice water to stop cooking. Drain again and pat dry.
03 - In a large skillet over medium heat, heat olive oil. Add garlic and sauté for 1 minute until fragrant, taking care not to brown.
04 - Add green beans and toss to coat in garlic oil. Cook for 4–5 minutes, stirring occasionally, until heated through and slightly blistered.
05 - Season with salt and pepper. If desired, drizzle with lemon juice and garnish with toasted almonds before serving.

# Expert Advice:

01 -
  • The beans keep their satisfying crunch instead of turning into mushy gray strings
  • Three ingredients you probably have in your pantry right now
  • Ready in under 15 minutes but tastes like something from a restaurant
02 -
  • The ice water bath is not optional unless you want limp beans
  • Garlic burns faster than you think, keep the heat at medium
  • Work in batches if your skillet is crowded or they will steam instead of sauté
03 -
  • Toast your almonds in a dry pan while the water boils
  • Dry the beans thoroughly after the ice bath or they will not blister properly
