02 - Place half of the cookies (12 pieces), flat side up, on the prepared baking tray with even spacing.
03 - Using a small ice cream scoop or tablespoon, place one scoop of softened vanilla ice cream onto each cookie base.
04 - Top each ice cream portion with a second cookie, pressing gently but firmly to create a sandwich without cracking the cookies.
05 - Immediately roll the exposed ice cream edges of each sandwich in the sprinkles, pressing lightly to adhere the decoration evenly.
06 - Return completed sandwiches to the baking tray and freeze for at least 1 hour until ice cream is completely firm.
07 - Serve directly from the freezer. Store leftovers in an airtight container in the freezer for up to 1 week.
