Thai Basil Chicken Stir-Fry (Printable Version)

01 - 1.1 lb boneless, skinless chicken thighs, thinly sliced

04 - 1 tablespoon fish sauce
05 - 1 teaspoon dark soy sauce (optional, for color)
06 - 1 teaspoon sugar

07 - 4 cloves garlic, minced
08 - 2 to 3 Thai bird’s eye chilies, finely sliced (adjust to taste)
09 - 1 small onion, thinly sliced (optional)
10 - 1 red bell pepper, thinly sliced (optional)
11 - 1 cup Thai basil leaves, loosely packed

12 - 2 tablespoons vegetable oil
13 - Steamed jasmine rice, for serving

# Directions:

01 - In a small mixing bowl, blend oyster sauce, soy sauce, fish sauce, dark soy sauce if using, and sugar until uniform. Reserve.
02 - Heat vegetable oil in a large wok or skillet over high heat. Add garlic and Thai chilies; stir-fry for approximately 30 seconds until fragrant.
03 - Introduce sliced chicken thighs to the wok. Stir-fry for 3 to 4 minutes until no longer pink.
04 - Add onion and red bell pepper if using. Stir-fry for 2 minutes until vegetables are barely tender.
05 - Pour in the combined sauce. Stir-fry for another 1 to 2 minutes to thoroughly coat and finish cooking the chicken.
06 - Turn off heat. Add Thai basil leaves, stirring until just wilted.
07 - Transfer to plates and serve immediately with steamed jasmine rice.
