# What You'll Need:

01 - 14 oz extra-firm tofu, pressed and cut into cubes
02 - 1 tablespoon olive oil

06 - Freshly ground black pepper, to taste

07 - 2 medium sweet potatoes (about 18 oz), peeled and diced
08 - 1 medium red bell pepper, diced
09 - 1 small red onion, diced
10 - 2 garlic cloves, minced
11 - 2 tablespoons olive oil
12 - 1 teaspoon ground cumin
13 - 1/2 teaspoon chili powder
14 - Salt and pepper, to taste

15 - 1/3 cup BBQ sauce (vegan and gluten-free as needed)
16 - 2 tablespoons fresh cilantro, chopped (optional)

# Directions:

01 - Set oven to 400°F and line baking sheets with parchment paper.
02 - Combine pressed, cubed tofu with 1 tablespoon olive oil, smoked paprika, garlic powder, salt, and pepper. Arrange evenly on a lined baking sheet.
03 - Toss diced sweet potatoes with 1 tablespoon olive oil, ground cumin, chili powder, salt, and pepper. Spread on a separate lined baking sheet.
04 - Place both trays in the oven and roast for 20–25 minutes, turning pieces halfway through, until tofu is crisp and sweet potatoes are golden and tender.
05 - Heat 1 tablespoon olive oil in a large skillet over medium heat. Cook red onion and bell pepper for 4–5 minutes until softened. Stir in minced garlic and sauté for an additional minute.
06 - Add roasted sweet potatoes and tofu to the skillet with vegetables. Pour BBQ sauce over contents and toss gently to coat. Cook for 2–3 minutes, ensuring mixture is heated through and evenly sauced.
07 - Adjust seasoning to taste. Remove skillet from heat and top with chopped cilantro and sliced spring onions, if desired. Serve warm, optionally with toasted bread or salad.
