01 - 14 ounces paneer, cut into 1-inch cubes
02 - 1 large red bell pepper, cut into 1-inch pieces

05 - 3/4 cup plain full-fat Greek yogurt
06 - 2 tablespoons chickpea flour (besan)
07 - 2 tablespoons fresh lemon juice
08 - 2 tablespoons vegetable oil
09 - 2 teaspoons ginger-garlic paste
10 - 1 1/2 teaspoons ground cumin
11 - 1 1/2 teaspoons ground coriander
12 - 1 teaspoon garam masala
13 - 1 teaspoon Kashmiri chili powder or mild paprika
14 - 1/2 teaspoon turmeric powder
15 - 1/2 teaspoon ground black pepper
16 - 1/2 to 1 teaspoon salt, to taste

# Directions:

01 - In a large bowl, whisk together Greek yogurt, chickpea flour, lemon juice, vegetable oil, ginger-garlic paste, ground cumin, ground coriander, garam masala, Kashmiri chili powder or paprika, turmeric, black pepper, and salt until the mixture is smooth and combined.
02 - Add cubed paneer, red bell pepper, green bell pepper, and onion to the marinade. Gently toss to coat all pieces evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours for a deeper flavor absorption.
03 - Preheat a grill, grill pan, or broiler to medium-high heat. If using wooden skewers, soak them in water for 20 minutes to prevent burning.
04 - Thread the marinated paneer, red bell pepper, green bell pepper, and onion alternately onto skewers for even cooking and a colorful presentation.
05 - Grill the skewers for 10 to 12 minutes, turning every 3 to 4 minutes, until the paneer is golden brown and the vegetables are lightly charred at the edges.
06 - Transfer cooked skewers to a platter, sprinkle generously with chopped cilantro, and serve immediately with lemon wedges on the side.
