01 - Preheat the oven to 425°F. Line a baking sheet with parchment paper or lightly grease it.
02 - In a large mixing bowl, toss sweet potato cubes with olive oil, ground cinnamon, sea salt, and black pepper until evenly coated.
03 - Spread the sweet potatoes in a single layer on the prepared baking sheet without overcrowding.
04 - Roast for 25 to 30 minutes, turning once halfway through, until sweet potatoes are golden and tender.
05 - Remove from oven and, if desired, drizzle with maple syrup or honey and sprinkle with fresh parsley before serving.
